Livia's Pasta Alfredo

Pasta Ingredients:

  • 2 eggs plus 2 egg yolks
  • 200 grams flour (plus 50g to reach the right consistency)
  • salt to taste
  • 2 tablespoons olive oil

Directions:

Add the flour and salt to a food processor. Slowly add in the eggs and oil. Pulse until the dough starts to form into a ball. Knead until the dough is smooth and soft, then refrigerate for 30 minutes. Cut into 4 parts, rolling out one piece at a time to a thickness of 1.5mm and cut as desired. Dust with cornmeal to keep from sticking. Boil for 3 minutes.

Alfredo Sauce Ingredients:

  • 1 cup unsalted butter
  • 1 1/2 cups grated Pecorino romano cheese or parmesan cheese
  • a couple tablespoons of pasta water (the water that you cooked the pasta in) if needed

Directions:

Warm a ceramic bowl in the microwave for 3 minutes. Add half the butter to the bowl, half the pasta, and half the cheese. Mix well. Repeat and add the remaining half. Finish by adding 2 ladles of pasta water and mix well. Enjoy!
