Cely's Lime Tart

Pie Crust Ingredients:

  • 2 cups flour
  • 150 grams unsalted butter (about 1 3/4 sticks)
  • 1/2 cup sugar
  • 1 egg yolk
  • pinch of salt

Preheat the oven to 350º. In a food processor, add the flour, butter, salt, sugar and egg yolk until combined and the dough starts to form into a ball. Don’t over mix. Roll out the dough into a circle and place in an 11″ tart pan. Blind bake for about 15 minutes until lightly golden. Remove from oven and set aside until cool.

Filling Ingredients:

  • 1 cup lime juice
  • zest of one lime
  • 28 ounces sweetened condensed milk (2 cans)
  • 14 ounces table cream (2 cans)

In a blender mix all ingredients until very well combined. Pour the filling into the baked pie crust and refrigerate for 3 hours. Decorate with lime zest or edible flowers and serve chilled.
