Grape Crumb Cake (Cuca de Uva)

Cake Ingredients:

  • 3 tablespoons unsalted butter
  • 2 cups sugar
  • 3 eggs, separated
  • 1/2 teaspoon vanilla
  • pinch of salt
  • 1/4 teaspoon lime zest
  • 2 cups all purpose flour
  • 1 cup whole milk
  • 1 tablespoon baking powder
  • Muscadine grapes (or substitute with banana, peach, nectarine)

Streusel Ingredients:

  • 1 cup flour
  • 1 cup sugar
  • 3 tablespoons unsalted butter

Preheat the oven to 350º.

In a small bowl, beat the egg whites until soft peaks form. Set aside.

In the bowl of an electric mixer beat the sugar, butter and egg yolks until creamy. Add vanilla, salt, lemon zest, and alternately add the flour and milk. Last add the baking powder. Fold the egg whites in gently.

In a separate bowl, prepare the streusel. Combine the flour, sugar and butter by hand or with a fork, until the mixture resembles a coarse crumbs.

Brush a 9×12 baking dish with butter. Pour the batter into the dish, cover with a layer of grapes and a layer of streusel. Bake for 30 to 40 minutes or until lightly golden brown.
