Coconut Sticky Bread

So sweet and delicious, this sticky bread will have you licking your fingers! Make sure to liberally soak the bread in syrup while it is still warm to make sure it stays moist. Another great family favorite and a fun new recipe to try over the holidays!

Cake Ingredients

  • 4 cups flour
  • 2 tablespoons sugar
  • pinch of salt
  • 1 tablespoon oil
  • 1 cup warm milk
  • 3 egg yolks
  • 2 tablespoons bread yeast

Filling Ingredients

  • 1/2 cup butter, softened
  • 1 fresh coconut, grated
  • 1 cup sugar
  • cinnamon to taste

Syrup Ingredients

  • 1 cup milk
  • 1 cup sugar
  • 1/4 teaspoon vanilla


Start by making a bread dough just as you would with a regular bread. Combine all of the ingredients together and knead in a standing mixer fitted with a hook attachment until smooth and elastic. Cover the dough with plastic wrap or a moist towel and allow it to rise in a warm place until nearly doubled in size.

Roll out the dough to form a rectangle about 16″ x 20″ in size. Brush the dough with the softened butter, sprinkle with coconut, sugar and just a touch of cinnamon. Roll the dough up lengthwise and wrap it inside a buttered bundt pan. Cover with plastic wrap or a moist towel and allow the bread to rise again until double in size.

Preheat the oven to 350. Bake for 40-45 minutes or until the top is lightly golden brown.

In a small saucepan, heat the milk and sugar until syrup comes to a soft boil, about 6-8 minutes. Remove from the heat and add the vanilla. When the bread has slightly cooled, flip it over out of the bundt pan onto a serving plate. Poke holes all around the top of the bread using a long toothpick or skewer and drizzle heavily with the syrup, allowing each pass to fully soak in. It’s very hard to over-soak the bread, so go for it and enjoy!
