Carlos' Chimichurri Sauce


  • 1 cup freshly chopped parsley, stems removed
  • 4 garlic cloves, minced
  • 2 teaspoons oregano
  • 1 cup olive oil
  • 4 tablespoons red wine vinegar
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Chop the parsley and add to a small bowl. Stir in the remaining ingredients and adjust to taste. Set aside for at least and hour before serving. This sauce can be stored in the refrigerator for several days.


My son-in-law has become the grill master around our house, and he prides himself on this delicious Chimichurri sauce which is now a must-have in my book at every family cookout!
