Brazilian Potato Salad

Dressing Ingredients:

  • 3 hard boiled eggs (just the yolks)
  • 1 egg yolk
  • 1 cup canola oil
  • 1 teaspoon lime juice
  • salt
  • pepper
  • lime juice
  • 2 tablespoons olive oil

With a fork smash the cooked egg yolks. In a bowl of electric mixer, add the cooked egg yolks, the raw egg yolk, and start the mixer, beating on high. Drizzle the olive oil in slowly and continue to beat. The dressing will start to thicken and turn a beautiful pale yellow color. When ready add salt and pepper to taste and more lime juice if desired. Leave in the refrigerator until ready to mix with the potatoes.

For the potatoes:

  • 3 lb potatoes, cooked with the skin
  • salt and pepper to taste
  • 1 tablespoon chives, chopped
  • 1 tablespoon onion, finely chopped

Boil the potatoes in water until tender. Let them cool and then peel. Cut into small cubes and add the 2 tablespoons of olive oil, add the dressing and mix well. Add in the onion, chives, and check the salt, pepper and lime to taste.
