Berry Trifle

Custard Ingredients:

  • 1 can sweetened condensed milk
  • 2 cans milk (use sweetened condensed milk can for measurements)
  • 4 egg yolks
  • 2 tablespoons corn starch
  • 3/4 teaspoon vanilla
  • 1 8 ounce can Table Cream (Nestle)

In a medium saucepan, over medium heat, whisk together sweetened condensed milk, milk, egg yolks, vanilla and corn starch. Cook whisking constantly until cream thickens into a pastry cream consistency. Pour the cream into a bowl and add the table cream. Mix well and cover with plastic wrap, pressing it directly onto the surface of the cream to avoid from forming a skin. Place in the refrigerator to cool.

Whipped Cream Ingredients:

  • 2 cups heavy whipping cream
  • 2 tablespoons sugar

Combine the whipping cream and sugar in the bowl of an electric mixer and beat until soft peaks form.

Trifle Ingredients:

  • 1 pound cake, cut into 1 inch squares (homemade or frozen from the store)
  • 2 cups strawberries
  • 2 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries
  • 4 tablespoons sugar

Mix the berries and sugar in a large bowl. Let stand for about 30 minutes to macerate. This will bring the juices out of the fruit.
To assemble the trifle, first add a layer of pastry cream to a bowl. Then layer in pound cake, fruits and 3 Tbsp of the juice of the fruits, and whipped cream. Repeat the layers until you reach the top of your dish, finishing with whipped cream. Decorate with fruit or mint leaves.
