Banoffi Pie


  • 1 1/2 cups graham cracker crumbs
  • 10 tablespoons butter, melted
  • 2 (14 ounce each) cans sweetened condensed milk
  • 1 1/2 cups heavy whipping cream
  • 1/3 cup confectioner’s powdered sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon instant coffee (powdered)
  • 3 large bananas, sliced
  • freshly ground coffee or chocolate shavings


Preheat the oven to 350 degrees.

Mix graham cracker crumbs with melted butter. Then press into a 9-inch pie plate. Bake for 5-8 minutes. Allow to cool.

Immerse the unopened cans of sweetened condensed milk in a deep pan of boiling water. Cover and boil for 3 hours, making sure the cans remain covered with water (add water as needed). Remove the cans from the water allow to cool completely before opening. Once opened, it will have transformed into caramel.

Whip the cream with sugar, vanilla, and instant coffee until thick and smooth.

On top of the crust, spread 1/3 of the caramel. Then add a layer of bananas. Repeat the layering two more times. Finally spoon or pipe on the cream and lightly sprinkle with the freshly ground coffee or chocolate shavings.
