Baked Cod


  • 6 medium potatoes sliced and cooked in water, 1/2 way
  • 1 red onion, sliced thin
  • 1 large garlic clove, minced
  • 1 red pepper, diced
  • 1 green pepper diced
  • 4 tomatoes sliced
  • salt and pepper to taste
  • juice of 1/2 lime
  • 3 tablespoons olive oil
  • fresh parsley
  • 4 large fish steaks


Season the fish with salt and pepper, and drizzle with lime juice.

On a baking dish, layer potato slices, 1/2 of the onion, 1/2 of the garlic, red pepper, green pepper, tomatoes, the left over onion and garlic. Top with fish and layer with rest of the ingredients. Salt and pepper to taste and drizzle generously with olive oil. Bake at 350 until fish is done, about 18-20 minutes.

Serve with white rice! Delicious!!
