Apple Pecan Bundt Cake

Apple Filling Ingredients:

  • 1 1/2 cup chopped apples
  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • 1/4 teaspoon cloves
  • 1/2 teaspoon cinnamon

In a skillet over medium heat, add the butter, brown sugar and let it melt. Add apples, cloves and cinnamon. Cook until the mixture starts to soften. Don’t overcook, or it will turn to mush! Set aside.

For the cake:

  • 1 cup sugar
  • 1 cup brown sugar
  • 1/2 cup butter
  • 1/2 teaspoon vanilla extract
  • 2 1/2 cups flour
  • 5 large eggs
  • 1 cup sour cream
  • 1/2 cup pecans or walnuts, chopped
  • pinch of salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

Combine sugars and butter in a large mixing bowl and beat until fluffy. Add eggs until well combined. Add vanilla, and the remaining dry ingredients. Gently fold in the apple mixture and pecans or walnuts. Bake until a toothpick inserted into the center of the cake comes out clean. About 30-40 min. Cool on wire rack.

Wonderful for a afternoon tea with a dollop of whipped cream!
