Blushing Berry Papagaio Collection

My Brazilian-inspired truffle collection! These were so much fun to develop.

Maracuja: An exotic passion fruit puree combined with a dark chocolate ganache, dipped in white and topped with a vivid brush of color.

Milk: Silky milk chocolate ganache, dipped in the same and topped with grated milk chocolate.

Caipirinha: Cachaça, lime and sugar combine in a white chocolate ganache, dipped in dark and topped with dry lime zest.

Dolce de Leite: Rich dolce de leite in a smooth milk chocolate ganache, dipped in dark and topped with a tuxedo chocolate curl.

Coco: Shredded coconut and a white chocolate coconut ganache, dipped in milk and topped with a sprinkle of shaved coconut.

Goiabada: Guava on a bed of milk chocolate ganache, shelled in dark and topped with a sugar drop of guava.

Manga: Delicate milk chocolate ganache with a fresh mango reduction, dipped in milk and topped with slivers of dry mango.

Dark: Luscious dark chocolate ganache, dipped in the same and topped with dark chocolate sequins.

Brigadeiro: A chocolate Brigadeiro encased in a dark chocolate shell, topped with festive chocolate sequins.

Malagueta: The sweet heat of a malagueta chile, tamed by milk chocolate, dipped in the same and topped with dry malagueta seeds.

Castanha do Para: Toasted and grated Brazil nuts combined with a dark chocolate ganache, dipped in dark and topped with slivers of Brazil nut.

Cafe com Leite: Coffee and milk chocolate ganache over a whipped white chocolate froth, shelled in white with a dark chocolate swirl.
